✨ Wrapping up an incredible tasting with four bottles that absolutely stole the show.

Epic lineups call for epic nights. 🍷
From grower Champagne and legendary Loire natural juice to back-to-back Right Bank Bordeaux royalty, this was pure magic in a glass. Here is the breakdown of what went down.

🥂 De Sousa ‘Avec le Temps’ Grand Cru Blanc de Blancs Extra Brut NV

Starting the night with some serious energy! This 100% Old-Vine Chardonnay from Avize delivers laser-focused chalky minerality. Beautiful notes of crisp green apple, lemon zest, toasted brioche, and roasted almonds. Razor-sharp acidity meets a gorgeous creaminess from the autolytic aging. Pure electricity.

🍎 Jean-Pierre Robinot / L'Ange Vin ‘Charme’

The natural wine unicorn of the evening. Jean-Pierre Robinot is a poet, and this pure Chenin Blanc from the Loire Valley is a shape-shifter. Wild and expressive on the nose with bruised apples, beeswax, quince, and a distinctive flinty reduction. The palate is wonderfully textured, savory, and bone-dry with a vibrant, salivating acidity. Unapologetically complex.

🔔 Château Angélus 2005 (Saint-Émilion Grand Cru)

Moving into Saint-Émilion royalty, and the 2005 Angélus is in a phenomenal drinking window right now! An opulent blend of Merlot and Cabernet Franc that cascades with black cherry liqueur, espresso roast, sweet licorice, and scorched earth. The tannins are incredibly plush, velvet-soft, and seamless, showing massive depth while retaining absolute elegance. Pure decadence.

🏰 Château Pavie 2000 (Saint-Émilion Grand Cru)

The grand finale—a legendary 100-point vintage that is evolving like a glacier. This wine is an absolute powerhouse. Deep, dark, and brooding with layers of crème de cassis, graphite, Cuban tobacco, and exotic incense. It hits the palate with immense concentration, structural grip, and a finish that literally stays with you for minutes. A true masterpiece.
