This cuvée is a blend of two distinct plots, "Chétillon" and "Chétillon de Haut," each contributing unique characteristics to the wine. The south and east-facing vineyards, classified as Grand Cru, bask in optimal sun exposure.
The vineyard boasts Chardonnay vines that are more than 45 years old, adding depth and complexity to the grapes. The viticulture practices employed are environmentally-friendly, with a focus on organic fertilizers, treatments, aromatherapy, and mechanical procedures inspired by biodynamic principles.
In the winery and cellar, the utmost care is taken to craft a wine of exceptional quality. The harvest is meticulously conducted, selecting only the finest grapes for the cuvée. Vinification involves a gentle pressing of the grapes, followed by alcoholic fermentation at a controlled temperature of 17°C. Malolactic fermentation takes place, imparting added depth and richness to the wine. The aging process occurs on fine lees for 10 months, with 51% in concrete vats and 49% in oak barrels. The wine undergoes natural clarification, without the need for fining or filtration.
Bottled in July 2016, this limited edition release comprises 1,650 bottles. The wine is aged on laths for a minimum of 6 years, allowing it to develop complexity and refine its character. With a dosage of 2 g/liter, it is classified as Extra-Brut, highlighting its purity and showcasing the natural expression of the fruit.
