2019 Château de Béru Chablis “Terroirs de Béru” is a biodynamic, single‑estate Chardonnay from Kimmeridgian limestone parcels around the hill of Béru, offering a tense, saline and deeply mineral expression of Chablis with real aging potential.
Coming from organically and biodynamically farmed vineyards rooted in fossil‑rich limestone and marl, the wine combines sea‑spray minerality with vibrant citrus and orchard‑fruit purity. On the nose, it opens with lemon zest, lime, green apple and pear, layered over crushed oyster shell, wet stone and hints of white flowers and subtle waxy notes. The palate is dry, energetic and finely textured, with bright acidity framing flavors of salted lemon, green apple and stone fruit, wrapped in an almost chalk‑powder grip and a touch of savory iodine. The finish is long, mouth‑watering and very mineral, leaving impressions of citrus peel, chalk, and sea breeze, making it a natural partner for oysters, shellfish, grilled white fish and fresh goat cheeses, as well as a candidate for several years of bottle development.
