CHAVOST Eurêka! Brut Nature NV is an expressive, no‑sulfites, no‑dosage Champagne that combines ripe fruit, vibrant acidity and a clearly terroir‑driven, vinous style. It is a small‑production Méthode Nature cuvée, crafted to show both the richness of Marne clay‑limestone and a very pure, precise Brut Nature profile.

"Nice nose with some chamomile, brioche, lemon, and minerals. Great acidity on the palate and surprisingly round and creamy mouthfeel, especially for a Brut Nature. There's more lemon, some crushed rocks, and a bit of autolytic character. Good finish that lingers. A lovely wine with good complexity and nice balance."

Site & Identity

Eurêka! comes from clay‑limestone vineyards around Chavot‑Courcourt on the south‑facing slopes near Épernay, in the Vallée de la Marne. The cooperative Chavost farms these parcels organically or in conversion and vinifies Eurêka! as one of its most audacious, low‑intervention cuvées, intended to reflect the village’s identity with maximum transparency.

Technical Tasting Note

Appearance: Pale to medium lemon‑gold with a fine, elegant bead and a lively, racy look in the glass.

Nose: Golden apple, lemon zest, linden blossom and fresh herbs, overlaid with vivid chalky‑mineral notes and a touch of biscuit and white flowers.

Palate: Dry, textural and racy, with lemon‑citrus zing, crunchy orchard fruit and a very fine mousse; the palate is driven by laser‑like acidity and a clear sense of vinosity and mineral cut.

Finish: Long, saline and mouth‑watering, with persistent citrus, green apple and stony, clay‑limestone minerality, leaving a precise, clean Brut Nature impression.

Winemaking & Style

Depending on the specific lot, Eurêka! is blended roughly from Pinot Noir, Chardonnay and Pinot Meunier; recent detailed specs show either a Pinot Noir‑major dominant blend (around 70% PN, 15% Meunier, 15% Chardonnay) or an equal Chardonnay/Meunier cuvée, always from first‑press juice. Fermentations (alcoholic and malolactic) are spontaneous with native yeasts in temperature‑controlled steel; no sulfites, no dosage and no oenological additives are used. For the secondary fermentation, the estate uses frozen press juice from the previous vintage as a natural starter, before aging on lees for at least 20 months and manual disgorgement without liqueur d’expédition. The result is a 12–12.5% ABV Brut Nature with real maturity, minerality and a very pure, “méthode nature” signature.
