Patrick Bouju - Domaine de la Boheme 'The Blanc', Auvergne NV

This is among the highest-priced wines from Vin de France - Vin de Table. Over the past three years the price has been moving upwards. No added sulfites

Patrick Bouju – Domaine de la Bohème “The Blanc” (Auvergne, NV – multi‑vintage) is an intense, pure and characterful natural white built entirely from old‑vine Chardonnay on volcanic and clay‑limestone terroir. It offers real depth, minerality and tension, with no added sulfur and a clear artisanal signature that strongly appeals to natural‑wine and terroir‑driven customers.

Site & Identity

Domaine de la Bohème is based in Saint‑Georges‑sur‑Allier, south‑east of Clermont‑Ferrand in the Auvergne, where Patrick Bouju has become a reference figure for natural, terroir‑focused wines from volcanic and clay‑limestone soils. “The Blanc” is one of the domaine’s most personal cuvées: a pure Auvergne Chardonnay from old vines, grown on basaltic and surrounding terroirs, expressing both the region’s volcanic edge and Bouju’s low‑intervention philosophy.

Technical Tasting Note

Appearance: Deep straw to bright yellow with greenish hints, showing both ripeness and freshness, and a slightly unfiltered, artisanal look typical of natural wines.

Nose: Intense and expressive, with ripe pear, peach, starfruit and yellow orchard fruit, layered with white flowers, spicy and mineral notes, hints of citrus peel and a clear stony, volcanic edge.

Palate: Medium‑ to full‑bodied, round and structured but taut, with a silky texture, ripe stone‑fruit flavours and a distinct saline, mineral line that brings great freshness and drinkability. The wine is pure and precise in spite of its natural style, with good volume and a lively backbone that promises positive development in bottle.

Finish: Long, salty and vibrant, leaving flavours of ripe white and yellow fruit, spice and wet stone, with a clean, mouth‑watering bitterness that underlines its structure and aging potential.

Winemaking & Style

“The Blanc” is a 100% Chardonnay from old vines in Auvergne, typically assembled from multiple recent vintages (for example 2022 and 2023) and aged around 12–15 months in oak barrels. Fermentation is spontaneous with indigenous yeasts, there is no added sulfur, and élevage in barrel aims to build depth and texture while preserving freshness and minerality; recent releases sit around 12–12.5% alcohol. The style is that of a serious, gastronomic natural white: intense, pure, slightly wild in a positive way, yet finely balanced and clearly terroir‑driven.

Buying Outlook

This cuvée is produced in very limited quantities and is already tightly allocated in many markets, with purchase often restricted to a few bottles per client. For a specialist list, “The Blanc” is an excellent natural‑wine reference: it offers a strong story (volcanic Auvergne, old vines, no‑sulfur, cult grower) and clear added value versus more generic Chardonnay. It is a compelling buy for adventurous customers, natural‑wine bars and collectors of cutting‑edge French whites, with solid short‑ to mid‑term aging potential rather than being just a “drink‑now” curiosity.

Food Pairing

“The Blanc” pairs very well with rich and aromatic dishes such as roast chicken, guinea fowl, veal in cream sauce, pork with herbs, and mushroom‑based plates. Its combination of texture, freshness and saline minerality also suits seafood (especially scallops, white fish with beurre blanc), alpine cheeses, and vegetable‑driven cuisine where depth and umami are key.
