It is made primarily from Pinot Noir grapes, with some Chardonnay, using biodynamic and organic farming practices. The wine undergoes spontaneous fermentation with indigenous yeasts in French oak barrels and is aged for a minimum of 72 months on the lees, resulting in a complex, well-structured sparkling wine.
Tasting notes describe it as having a sanguine orange color with a vinous character. The aroma is expressive and fruity, featuring scents of cherry compote, red fruits, hints of cinnamon, menthol nuances, and toasted notes. On the palate, it is expansive, harmonious, and succulent, with an elegant balance of lightness and density, making it intricate and enduring. The traditional "à la volée" disgorging method is used, emphasizing a handcrafted approach that preserves the wine's natural character.
