Antoine Bouvet “Saignée de Bisseuil” Rosé Extra Brut NV is a serious, single-parcel, saignée rosé Champagne from old-vine Pinot Noir in Bisseuil (Premier Cru), made in a very pure, low-sulfur, Extra Brut style. It is intense, fruit-driven, and distinctly vinous, with fine perlage, vibrant acidity, and a clear sense of place.
Vineyard and winemaking

100% Pinot Noir from the Les Pautes parcel in Bisseuil, planted in 1964 (Premier Cru terroir on the right bank of the Marne).

Rosé color comes exclusively from the saignée method (maceration on skins), not blending.

Manual harvest, spontaneous fermentation, full malolactic, and aging in oak.

No dosage (0 g/L, effectively Brut Nature), no filtration, no fining, and very low sulfites (around 22 mg/L).

Although labeled NV, recent releases are effectively single-vintage (e.g., 2022 harvest, disgorged around October 2025, with 15+ months on lees).
Tasting note
Appearance: Deep salmon-pink to light ruby, with a fine, persistent mousse.
Nose: Focused on ripe red fruit—strawberry, raspberry, cherry—with hints of yogurt, fresh grass, vanilla toffee, and a touch of herbs and spice from oak.
Palate: Medium-bodied and creamy, with generous fruit, vibrant acidity, and a distinctly vinous, almost still-wine intensity. The texture is rich but not heavy, with fine bubbles and a clear mineral undercurrent.
Finish: Fresh, savory, and long, with lingering red fruit, subtle spice, and a clean, slightly chalky close.
Style and drinking window
This is a grower Champagne for people who like serious, food-oriented rosé: intense, structured, and clearly terroir-driven rather than simple or aperitif-style. It is approachable now but has the depth to hold for several years in a cool cellar.
Food pairing
It pairs beautifully with meaty and oily fish (tuna, salmon, mackerel), grilled seafood, charcuterie, roast chicken, and light meats. It also works well with soft cheeses, mushroom dishes, and refined preparations where its fruit and acidity can balance richness.
