The 2025 blend is 76% Merlot and 24% Cabernet Franc, harvested from August 28 to September 18 with yields around 40 hl/ha. TERROIR

Château Canon occupies a southwest-facing limestone terrace, which makes up most of its surface area. A quarter of the estate is located on the slope of this gently sloping hill towards the Dordogne. This imposing mass of sedimentary rocks is crisscrossed with numerous galleries that bear witness to the exploitation of this building material since the 16th century. The site, reaching a peak of 87 meters, benefits from perfect ventilation and a walled perimeter that protects the vines from spring frosts. This situation allowed the château to be among the few estates producing wine during the severe frosts of 1766 and 1956.

WINEMAKING

Parcel vinification, with gravity-fed filling, in stainless steel truncated cone tanks with double thermoregulated walls. Gravity draining. Malolactic fermentation: 1/3 in new barrels and 2/3 in tanks.

AGEING

In French oak barrels, with medium or medium-long toasting. 16 to 18 months – 49% new wood, 7% large casks. Racking by évasion.

VARIETALS

Merlot 76%, Cabernet Franc 24%.

TASTING

The colour is deep, luminous. The aromatic profile opens on a beautiful red fruit, both rich and fresh, unctuous yet cool – strawberry, blackberry, cherry.
