Chavost Paradoxe Brut Nature, Champagne NV
No added sulfites!
CHAVOST Paradoxe Brut Nature NV is a fresh, precise, and confidently modern Champagne that combines citrus purity, orchard fruit, and a dry mineral finish. It is a multi-vintage Brut Nature cuvée with real personality, delivering the house’s natural, terroir-first style in a more structured and serious form.
Site & Identity
Paradoxe comes from Chavost’s vineyards in the Côteaux Sud d’Épernay, where clay-limestone soils and a cool exposure help preserve freshness and tension. The cuvée is built around Chardonnay and Pinot Meunier, and it reflects the domaine’s organic, low-intervention approach with no added dosage and no added sulfites.
Technical Tasting Note
Appearance: Pale straw-yellow with a fine, lively mousse.
Nose: Ripe pear, fresh apple, lemon zest, pastry, and subtle chalky minerality.
Palate: Dry and chiselled, with crisp orchard fruit, citrus lift, fine bubbles, and a balanced mix of tension and roundness.
Finish: Long, straight, and luminous, with saline freshness and a clean, dry mineral edge.
Winemaking & Style
Paradoxe is a non-vintage blend built from several recent harvests, designed to combine freshness from cooler years with roundness from riper ones. It is vinified with a natural, low-intervention philosophy, and the Brut Nature style keeps the wine focused on fruit purity, texture, and terroir expression rather than sweetness.
Buying Outlook
This is an excellent choice for customers who want a serious organic Champagne with a clear identity and a modern, dry profile. It offers strong value in the grower Champagne segment and works particularly well for lists that want something precise, distinctive, and food-friendly.
Food Pairing
It pairs very well with oysters, shellfish, sashimi, grilled fish, and lightly fried seafood. It also works nicely with roast chicken, creamy poultry dishes, Comté, and simple canapés where freshness and texture matter.
