Domaine Bernard Defaix Bougros Chablis Grand Cru 2023
The Domaine Bernard Defaix is now managed by his sons Didier and Sylvain.
Domaine Bernard Defaix Bougros Chablis Grand Cru 2023 is a top‑tier Chardonnay from the Bougros Grand Cru on the western/south‑western edge of the Chablis slope, combining generous fruit with incisive minerality.
Tasting Profile
The nose shows subtle depth with floral notes of honeysuckle, citrus oil, stone fruits and a gentle nuttiness over clear mineral tones. The palate is plush and rounded yet distinctly mineral, with excellent tension, sweetness of ripe fruit, and bright, saline, stony length that reflects its Grand Cru terroir.
Key Traits
-
Grape & Appellation: 100% Chardonnay, Chablis Grand Cru Bougros.
-
Style & Aging: Fermented and aged in (largely used) oak barrels with some bâtonnage; around 18 months’ élevage in a very cold cellar for natural clarification and additional texture.
-
Character & Potential: Sunny and concentrated but finely balanced by mineral tension; structured for further development in bottle and excellent with turbot, other rich white fish, or refined seafood dishes.
Terroir & Label
-
Terroir: Parcels at the top of Bougros on the west/south‑west extremity of the Grand Cru slope, with excellent sun exposure and classic Kimmeridgian limestone that drives its saline, oyster‑shell minerality.
-
Presentation: Traditional Chablis bottle in green glass with the Domaine Bernard Defaix label, clearly marked “Chablis Grand Cru Bougros”.
