The Producer
Domaine Bernard Defaix is a family-owned estate based in Milly, overlooking the village and the Côte de Léchet hill. Didier Defaix is the vineyard’s emblematic vigneron and the site’s only certified-organic grower, making the domaine the largest single holder within this Premier Cru.
The estate’s cellars sit at the base of the Léchet hill, allowing for gravity-fed winemaking and minimal intervention. The 2023 Côte de Léchet reflects the domaine’s commitment to precision, freshness and the expression of one of Chablis’s most distinctive terroirs.
Vineyard and Terroir
Côte de Léchet is a steep, sunlit Premier Cru vineyard on the left bank of the Serein River, known for its Kimmeridgian limestone soils and dramatic slope. The site produces wines of crystalline purity, tight structure and unmistakable mineral depth.
Jasper Morris MW describes an archetypal wine from Léchet as “entirely white fruited in style,” with more intensity than Beauroy, while Andrew Jefford suggests the hill gives “some of the most ‘mineral’ Chablis of all.” The southeast-facing exposure ensures optimal ripeness while preserving the site’s hallmark freshness and salinity.
The 2023 Vintage
The 2023 Chablis growing season was warm and generous, producing ripe, healthy fruit with good concentration. In 2023, you get the best of both worlds, alongside chiselled, chalky texture and an extra spoonful of fruit sweetness compared to a classical vintage.
The 2023 Côte de Léchet has a clean, precise, very focused nose with a seductive marine aroma. The palate is very well balanced with a fine bead of acidity, slightly reductive in style, with good weight and a powerful finish.
Winemaking and Ageing
The Chardonnay is hand-harvested and fermented with native yeasts, then aged on fine lees in stainless steel for added texture without oak influence. To build complexity, Didier Defaix ferments a quarter of this wine in old, neutral barrels that previously housed the domaine’s old-vine Reserve Léchet bottling.
The wine remains in tank for over 12 months, allowing time for full integration of fruit and minerality before bottling. This approach preserves the vineyard’s freshness and salinity while adding subtle depth and aromatic complexity.
Tasting Profile
The 2023 Côte de Léchet opens with aromas of lemon zest, white peach, sea spray, chalk and green almond. The palate is dry, linear and tense, showing vibrant citrus and orchard fruit layered over crushed rock and a stony, saline core.
Allen Meadows describes ripe and layered aromas of citrus confit, poached pear, shellfish and a hint of wet stone, with excellent volume to the beautifully textured medium-bodied flavours that flash evident power and minerality on the sappy, saline and dry finale that is sneaky long.
Aroma and flavour: lemon zest, white peach, sea spray, chalk, green almond, citrus confit, poached pear, shellfish, wet stone, gunflint and subtle white pepper.
Palate: medium-bodied, taut and linear, with vibrant acidity, stony minerality, saline core and a long, lifted finish.
Style: a classic, age-worthy Chablis Premier Cru—crystalline, mineral and precise, with the structure and tension to develop over time.
Drinking Window
Allen Meadows assigns a drinking window of 2029+, noting that the wine is a Top Value Wine with sneaky long finish. The 2023 vintage’s freshness and fine tannins give it the balance to develop gracefully over the long term.
For current drinking, decanting is recommended. Allow the wine 30–60 minutes in a large white-wine glass to reveal its full aromatic complexity and mineral depth.
Food Pairing
Serve at 8–10°C with oysters, raw shellfish, sea urchin, langoustines, crab, sushi and sashimi. Its saline finish and citrus precision also make it excellent with grilled fish, white asparagus, poultry in cream sauce, and young or lightly aged goat’s cheese.
The domaine itself suggests pairing it with fish dishes, even in rich sauces, poultry and risotto, allowing the wine’s stony, sunny soils to complement the dish.
Collector Note
This is a benchmark expression of one of Chablis’s most celebrated Premier Cru sites, made by the vineyard’s only certified-organic grower. Domaine de Defaix’s Côte de Léchet is produced in significant quantities—48,000 bottles in 2023—yet its quality and terroir expression make it a compelling choice for collectors seeking age-worthy, terroir-driven Chablis with long-term development potential.
The combination of the domaine’s reputation, the Kimmeridgian limestone terroir and the freshness of the 2023 vintage makes this a compelling long-term proposition for collectors of age-worthy white Burgundy.
Recommended serving: open and allow 30–60 minutes in a large white-wine glass before serving at 8–10°C to reveal its full aromatic complexity and mineral depth.
