Domaine Simon Bize et Fils Les Champlains Bourgogne Blanc 2022 is an elegant, finely chiseled white Burgundy that captures the pure, mineral-driven style of this respected Savigny-lès-Beaune domaine. It offers a beautiful balance of brightness, texture and refinement, making it a standout Bourgogne Blanc with clearly premium intent.

Site & Identity

Les Champlains comes from a 4 ha east-facing parcel just outside Savigny, overlooking the valley, with very stony, pebbly soils that naturally give low yields and high concentration. Planted mainly to Chardonnay with a small touch of Pinot Gris, this vineyard is particularly dear to the domaine and is known for producing a Bourgogne Blanc that is richer, rounder and more complete than many wines at this level. In 2022, the cuvée shows the house signature of tension and finesse, wrapped in a subtly generous, creamy frame.

Technical Tasting Note

  • Appearance: Pale, bright gold with crystalline reflections and a youthful, luminous aspect.

  • Nose: Expressive aromas of white flowers, fresh almonds, ripe lemon, orchard fruit and a hint of pastry, set against a clear mineral backdrop.

  • Palate: Dry, precise and finely textured, combining ripe citrus and stone fruit with a core of freshness; the mid-palate shows notable richness and roundness, carried by lively acidity and a lightly creamy feel.

  • Finish: Long for the appellation, with lingering notes of citrus zest, almond and chalky, stony minerality.

Winemaking & Style

Les Champlains is planted to about 95% Chardonnay and 5% Pinot Gris, on very rocky, limestone-rich soils that naturally limit yields and enhance concentration. The wine is pressed directly, fermented with ambient yeasts and aged around 9 months in barrels with little to no new oak, followed by a short time in tank before bottling, in line with the domaine’s restrained, minimally interventionist philosophy. The 2022 vintage shows the cuvée’s typical profile: more richness, roundness and volume than the estate’s other Bourgogne Blanc, yet still firmly anchored in freshness and minerality.

Food Pairing

Ideal with oysters, shellfish, grilled fish, roast chicken, simple cream-sauce dishes and fine vegetable cuisine. Its combination of clarity, texture and mineral tension also makes it an excellent partner for goat’s cheese, young Comté and refined bistro-style cooking.
