Famille Paquet Bourgogne Blanc 2021
Tasting notes
This Bourgogne Chardonnay has a pale yellow colour with green tnts. Rich nose of acacia honey and fruits. An atractve wine, lively and expressive with aromas of yellow fruits and candies.
Food and wine paring
This Bourgogne Chardonnay will be ideal for the aperitf. A great accompaniment to appetzers, mixed salads or grilled fshes.
Recommended serving temperature: 13°C
Winemaking
From arrival, the grapes are pressed (pneumatc), no sulftes are addad. Once pressed, very gentle setling. Fermentaton in temperature-controlled vats (cold) for 4 to 6 weeks. Use of natural yeast to allow the grape and the terroir to express themselves.
Aging 100% in vats for 10 months to preserve the freshness of the Chardonnay.
Vintage 2020
2021 vintage is our 1st vintage certfed Organic farming. In April, three frost episodes (up to -8°C) leading to plant damage and profond impact on 2021 harvest. We have registered historical losses from 40% to 100% on some cuvées. Harvests have started on September 15th up to October 5th, picked up in 15kg small bucket. From the arrival at the estate, grapes are stored in fridge-container and were sorted (sortng table). We had to make great sacrifces in order to preserve quality. Afer few months in the cellar, results are consistent with efforts made during all the year.
