Terroir and blend
The fruit for Cuvée Théophile comes from about 0.5 hectares of Grand Cru vineyards: Chardonnay in Le Mesnil‑sur‑Oger (Champs d’Alouettes) and Pinot Noir in Ambonnay (Grandes Ruelles), all on pure chalk. The typical blend is around 60% Chardonnay and 40% Pinot Noir, combining Mesnil tension with Ambonnay depth and structure.
Winemaking
Fermentation takes place in used barrique barrels, emphasizing texture and complexity rather than overt oak flavor. The wine then spends extended time on lees before being bottled as Extra Brut, keeping dosage very low to highlight its natural concentration and mineral cut.
