Les Justices Saumur Blanc Juste 2022
Year of planting : around 1970
Dampierre-sur-Loire, Les Ulmes and Le Puy Notre Dame, on clay-limestone soils with veins of flintstone. The grapes are harvested by hand, and vinified naturally: after direct pressing, the wine has a slow fermentation, with indigenous yeasts, followed by 7 months of maturation on its lees. Bottled at the estate on the 26th of April 2023, without fining, filtration, just a micro-dose of sulphur during vinification.
Terroir : south of the Loire, at the east end of Saumur Champigny AOP, limestone/clay/flint give the wine its freshness and lots of hand work in the vines using organical specifications (in conversion) we use very little technological process = hand picked grapes, slow fermentation (40 days) to gain fruit and fatness.
