"The best Cabernets seem to fall into one of two categories – smooth, fresh fruit with good structure and tannins, or dried fruit with a lean, muscular structure and a complex savory finish. This one falls into the latter category, lean but not spare, tannic without being harsh, with an amazing amount of complexity in the finish – dried herbs, dried fruits, walnuts, barrel flavors. "The 2021 Cabernet Sauvignon Nathan Coombs Estate is 100% Cabernet Sauvignon sourced from the estate's best blocks, planted around 2002. Scents of blueberries, cassis, vanilla, loam, cedar and some faint floral elements appear on the soaring, complex nose, while the full-bodied palate is concentrated, almost creamy-rich across the mid-palate, then long and supple on the finish. Impressive for its concentration and energy.
It was a gorgeous November morning when I pointed my rental car toward Sebastopol and the Paul Hobbs facility on Gravenstein Highway. Harvest had wrapped up, but the scent of ferments was still in the air, and the team was digging out a couple of tanks while Paul Hobbs and I tasted his latest Napa releases in a glass-walled tasting room and discussed recent vintages.
"[2021] was a late bud break, but then it sort of hit its stride," said Hobbs. "We finished harvesting the third week of October—what a great vintage, no curveballs or wrinkles. Basically, every vineyard hit its yield target—you felt like a genius, things were textbook all the way."
Although we didn't taste any barrel samples of the 2022s, Hobbs pointed out, "We had the big heat spike September 4-9. That was a toughy for up-valley vineyards."
Hobbs's Napa lineup sources grapes from three Beckstoffer-owned vineyards—Dr. Crane, Las Piedras and To Kalon—but he also has own property in Coombsville—the Nathan Coombs Estate.
