Tasting Notes
Vibrancy and electricity in a bottle. Lemon zest with a lemon curd richness. Hint of tropical richness on the nose and finish. It’s a rebirth of senses in your mouth.
Winemakers Notes
I know there’s a lot of chardonnays out there that aren’t people’s favorites. But I love Chardonnay, specifically Chablis style Chardonnay. I wanted to make something in that style and I also got to help farm this vineyard with a good friend. I’m so so excited to share this wine. It’s something special.
Winemaking
Fermented with – Native yeasts
Aged in – Neutral French oak barrels for 11 months on gross lees without sulfur
pH – 3.11
ABV - 12.0%
Additions – 15 parts per million sulfur right before bottling
Method – Direct to press whole cluster then fermented in barrel. Fermented for a full month before it finished.
