Stéphane Coquillette ‘By Louis’ Extra Brut 2013 is a zero‑dosage Blanc de Noirs Champagne from 100% Pinot Noir, sourced from top parcels in Aÿ and Mareuil‑sur‑Aÿ and bottled as the estate’s tête‑de‑cuvée.

Style and terroir

The wine is made entirely from Pinot Noir grown on chalk and limestone slopes classified as Grand and Premier Cru around Aÿ and Mareuil‑sur‑Aÿ. Zero dosage (Brut Nature/Extra Brut) emphasizes precision, structure, and mineral length over sweetness, giving a very dry, vinous profile.

Tasting profile

Color is light gold with a fine, persistent mousse. The nose shows red‑berry tones (raspberry, wild strawberry), citrus zest, subtle spice and a touch of oak, alongside chalky and brioche notes from lees aging. The palate is full‑bodied yet tense, with finely melting bubbles, vibrant acidity, pure red‑fruit core and a long, fresh, very pure finish that is best suited to food rather than aperitif sipping.

Winemaking and pairing

This cuvée is vinified as a Blanc de Noirs with careful pressing, extended lees aging and no dosage at disgorgement to preserve terroir expression. It pairs particularly well with rich poultry, veal, game birds, or dishes featuring mushrooms and truffles, where its structure and dryness can stand up to deeper flavors.
