The magic of wine lies in its age. A well-preserved old wine is like a time capsule, holding a message from the winemaker to future generations. Amazingly, such wines can answer many questions for which you previously could not find answers. For instance, what is evolution in wine, and how can one understand that a wine is alive despite its considerable age?
Old Bordeaux is a magnificent thing, capable of overshadowing any other wine in the world. The Pavie 1957 was precisely that.
It felt as though the wine had been in a lethargic sleep and had just been awakened. Tasted blind, it was the most delicate expression in a Burgundian style, with a perfect, fine body, gentle, silky tannins, and a fantastic, lightly perfumed aroma. In a word, an immortal wine, beside which time stands still.
