Château Haut-Bailly Pessac-Léognan Grand Cru Classé 2019 is a powerful yet supremely elegant Left Bank Bordeaux, uniting depth, finesse and a very pure expression of its gravel terroir. "The 2019 Haut-Bailly unwinds in the glass with complex aromas of dark berries, bay leaf, loamy soil and cigar wrapper, framed by a discreet patina of new oak. Haut-Bailly now boasts one of Bordeaux's grander new wineries, but the 2019 vintage at this address reminds us that the old facilities were more than capable of delivering excellence too! Winemaking here is rather gentle, with comparatively cool fermentation temperatures and a modest 50% new oak, yet the 2019s are rather structured, serious wines that will demand a bit of patience, reflecting a more classically proportioned, elegant style than the more flamboyant 2018. Site & Identity

Haut-Bailly’s 30 hectares of vines lie on a high gravel ridge over sand and clay in Léognan, a setting that naturally gives wines of graphite, cigar-box complexity and refined structure. Old vines, including parcels over 100 years of age, contribute extra concentration and nuance, adding a distinctive gravitas to the grand vin. The 2019 captures this identity in a particularly complete way: cool in style, deeply toned and classically Pessac-Léognan, with great precision and freshness behind the ripe fruit.

Technical Tasting Note

• Appearance: Deep, vibrant ruby to purple, with excellent color saturation and youthful brightness.

• Nose: Complex aromas of dark berries, blackcurrant, laurel, cigar wrapper, graphite, earth and discreet oak spice, with a subtle floral lift.

• Palate: Full, velvety and elegantly muscular, combining powerful, concentrated black fruit with lively acidity and ripe, fine-grained tannins.

• Finish: Long, focused and refined, with lingering notes of cassis, tobacco, mineral graphite and a cool, savoury edge that underlines its class and structure.

Winemaking & Style

The 2019 blend is 56% Cabernet Sauvignon, 36% Merlot, 4% Cabernet Franc and 4% Petit Verdot, at about 13.7% alcohol. Vinification takes place in cement and stainless-steel vats, followed by 16–18 months of aging in French oak, around 50–60% of which is new, bringing polish and complexity without overwhelming the fruit. Stylistically, 2019 Haut-Bailly is described as potent, concentrated and impeccably structured, with cigar-box, mineral and graphite notes framing its dense, pure core of fruit—classic Haut-Bailly in a particularly complete, long-lived guise.

Food Pairing

Excellent with côte de boeuf, roast lamb, venison, game birds, dishes with truffle or wild mushrooms, and mature hard cheeses. Its combination of depth, freshness and fine tannic backbone makes it ideal for long-term cellaring and for pairing with haute cuisine on special occasions.
