Terroir and viticulture
Les Fleurières lies at the southern end of Nuits‑Saint‑Georges, on brown limestone soils mixed with sand, clay and small stones, historically used as gardens and allotments for the town. The domaine farms around 1.23 ha of vines here, over 35 years old, giving naturally low yields and good concentration.
Winemaking
The wine is 100% Pinot Noir, hand‑harvested and carefully sorted on a triage table before fermentation. It undergoes a cold maceration, then spontaneous fermentation with native yeasts, followed by 15–18 months of aging in French oak barrels (about 30% new), and is bottled with minimal sulphur, without fining or filtration.
Tasting profile (2021)
Tasting notes describe a delicate, expressive nose of raspberry, red cherry and hints of licorice, set against a subtle floral and mineral background. On the palate it opens with a fresh, fruity attack, medium body and fine‑grained tannins, where everything feels balanced: bright red fruit, lively acidity, gentle spice and a clean, persistent finish.
Character and food pairing
Compared with more muscular Nuits‑Saint‑Georges sites, Les Fleurières in 2021 leans toward elegance and drinkability, while still retaining the appellation’s savory, earthy dimension. It pairs well with duck or game birds, roast chicken, veal, and nuanced mushroom dishes that echo its mix of red fruit, subtle spice and earth.
